Think juices, hummus, pickles, soup, and pair them with a nice tangy vinegar or goat cheese. They add color, antioxidants, and flavor, so it's no wonder beets are completely on-trend and are receiving the spotlight.

Restaurants across the world are using these versatile vegetables in remarkable ways, so we thought it would be fun to talk about 6 fun facts you might not know about this high-energy, purple root vegetable. 

Fun Fact #1: The entire beetroot plant is edible 

Did you know that the entire beetroot plant is completely edible? From its purple bulbs to its green leaves and stems, you can prepare the entire beetroot plant in a variety of ways. You won’t be disappointed when you try adding them to recipes as they add a zesty and fresh flavor. Try frying the whole plant with shallots, garlic, and oranges. Yum! 

Fun Fact #2: Beetroot juice can decrease muscle soreness
